Steps to make Mandi rice (chicken mandi):
- Here is my ingredients for this recipe
- This is how to make my mandi spice, heating up the pan add coriander seeds, cloves, green cardamom sticks, cinnamon sticks and lemon zest, roast them off the heat and let it cool down, then grind them to a fine powder.
- Add mandi spice garlic paste, salt, curry black pepper, turmeric, vegetable oil, lemon juice and seasoning cubes
- Add oil and lemon juice to the spice and mix them well
- Remove all chicken skin and cut it into 2 parts
- Marinate the chicken
- Cover and keep in the fridge for 2 hours.
- Heat up vegetable oil in the pan/pot
- Add onions and salt
- Fry it till onion turns in to golden brown.
- Add cloves and mix together
- Remove some brown onions to use it for garnishing
- Add 2 cups of water, then add salt and seasoning,
- Stir it properly
- Then add in mandi spice, curry and tomato paste mix and cook on high flame
- Add the rice (washed and soaked for 1 hour) into the stock
- Then mix well
- Place the rack on top of your pot, then bring the marinated chicken and place it on the rack, transfer the entire things into the oven.
- Cook it at 180 degree Celsius for 30minutes
- After 30 minutes remove it from oven, then sprinkle some brown onions and mix the rice
